Happy World Chocolate Day. So oh what the hey, in honor I had to make skillet cookies today. After being out of town for several days and nights, I finally got back to my smokers and grills. You see, on the weekends I often make most of my meats for the upcoming week. Today was no different. I made a boatload of wings (hmmm, Wing Wednesday is coming up), chicken breasts, steaks and voila, for dessert, a couple of skillet cookies or sometimes people call this pizookies. I made one gluten-free and one regular style. With the exception of Blue Diamond almond flour and Splenda, all of the other ingredients in the gluten-free skillet cookie are the same: butter, brown sugar, vanilla extract, egg yolk, baking soda and yep, chocolate chips. I put these into the smoker at 350 degrees and smoked these for 22 minutes. Now I mighta had a little small apple chunk still in my charcoal from when I made my chicken wings and normally I’d start with clean charcoal, but hey, I was lazy. Aaaand thankfully the smoke was just a hint and wasn’t overpowering. After not really waiting for this to cool down and burning the roof of my mouth, I added a little vanilla bean ice cream on top. Boy that rocks. Yes or know. I gotta know. Do you like chocolate a little or a latte? #worldchocolateday #chocolatecookies #skilletcookie #pizookie #chocolatechipcookies
